You can use the console to remove XP by giving yourself a negative amount like TKB says - google nwn console commands. That will strip levels down as far as level 1 depending on how much xp you remove. You can't change your level 1 class, race, gender etc. You then give yourself a positive amount of xp to go back to where you were and redo all the level up choices. Yes there are some character building modules that have this feature but you have to do this between modules.
